    Thanks. First time smoking sirloin and I’ll be honest... not my favorite. I don’t think it’s fatty enough to get tender. In all fairness, I normally grill it in 2x2 inch strips and cube it for Mexican lunch bowls.

    My 2005 prerunner had frame failure Aug 2024
    I really enjoyed my work and most of the people. I just felt that for me 34+ years behind a desk was enough. Tech was changing, the youth had different work styles and this covid crap was the topper. I want to learn to relax

    I have the PID controller working on my vertical pellet smoker. It's been running for 30 minutes now.

    Instead of throwing too many pictures here I will link to my website. I can tell already that it runs differently. Instead of the fan shutting on - off - on -off the speed varies to keep the temperature more constant.

    My 2005 prerunner had frame failure Aug 2024
    Canadian Thanksgiving weekend. Turkey was too big for 4 of us so I split it. 1/2 is roasting in the oven, took the breast and leg and smoked them. Used the remaining parts to make turkey stock (broth). Quickly thawed some side ribs to make the smoke worthwhile.
