Trying larger pieces this time... definitely cooking slower.

a little over three hours in.

Was gonna cook a brisket yesterday. Didnt check fit and it was too big for my little pellet. Started looking into cutting it into smaller pieces and that snowballed into looking at bigger pellet smoker/grills. Went out and picked up a Pit Boss Pro 1100. Shouldnt have any problems fitting briskets now. Prepped it yesterday and ran my first cook on it today. Came out pretty good!

Yeah turned out ok. A little mushy after 7 hours. Taste was spot on.

I do not like fish at all. My pops was an avid fisher (and I fished a lot by default) and ate way too much growing up.

This smoked salmon isn’t bad. I’ll keep dialing it in.

Could you do me a favor? Do you happen to have a picture of the back and bottom of it? My friend got a new Travel Trailer he hates the gas grill on it. I was thinking about getting them one of the Davy Crockett’s to replace it for Christmas. Want to see if we could mount it to the swing arm he has for the propane.

If I were to mount one I would probably remove the legs and create a bracket that attaches to the same spot that the legs bolt on. The Davy Crocket isnt built with very thick metal and thats likely the strongest attachment option.

Ya I was thinking depending on what it looks like creating an L bracket that goes under and then up the back so that it will slide onto the holder for his swing out arm. It would in essence be a shelf with a back on it and the DC would bolt to the bottom part of the shelf.

You could probably bolt into the legs or the spring legs. I’ve seen a few post pics of their DC mounted to stuff.

going to go try and get a pic for you now.

Here's some crappy photos of my pastrami. Turned out really tasty.

First pic is after 2 hours of steam.

Either later this week or next week, I'm going to do a pastrami in the instant pot :D

...It will probably not be as good.

Awesome. Thank you. Gives me some ideas on what I’ll need to make for it after we give it to them on Christmas and before next camping season gets here.

Can get it all bent up, welded and then powder coat it and toss it in the oven so it holds up well.

I think he’s going to be excited.

It should be easy. I’d imagine you could get some metal arms and bend them to the shape of the grill and then just ratchet strap it down from there. I was trying to find the pic I saw if some dude who had his mounted to his RV but no dice.

I’ve seen a couple. I want it to lock into the swing arm he has so that it’s stable and easy to break down.

I'm no expert by any means but it looks like either one would do for what you plan on doing. Only other thing I noticed was the first one was rated #99 in meat grinders on Amazon and the second one ranked #29. Good luck with your sausage making.
