    Picked up a used cast iron griddle on Marketplace today. It's a heavy beast. I tested it out tonight with some potatoes and onions. It worked great but it was hard keeping it from getting way too hot on the Camp Chef. People recommend getting the Camp Chef "flame tamers". Has anyone tried a flame tamer?

    Nothing too spectacular here just a basic omelette from this morning. But I gotta say I’m really digging this Smithey skillet I got for my birthday a while back. Super slick!     Chili on cordwood with cast iron today. I use and upside down skillet as a platform, heaped coals around it and then a skillet of sausage right side up on top. I had the Dutch Oven raging hot when the beef chunks went in, the whole thing went together quick.

    We did another camping trip with cast iron.

    It had been 30 years since I cooked with a dutch oven over the fire as a kid in scouts. We gave it a go and it worked perfectly.

    Night one:
    Cioppino. Fresh halibut, salmon, scrimp, and mussels. This time I cooked the fish separately on the dutch oven lid and served it with the stew. Although we were camped right on the Salish Sea, NO, I didn't catch any of the fish myself. I got it at Whole Foods :D

    Night two:
    T-bones, potatoes, asparagus, onions, garlic, bread. Why not just cook the T-bones on the grill? Well, I wanted to try a wine mushroom reduction sauce.

    Judge's committe added "appearance and presentation" to the judging categories for our annual churchwide chili cookoff - that happens in six days.

    First I drilled some holes in some plywood. This was CDX DougFir, but I went over it with a handplane after I was done working on it.

    this one is 11"×11" then the sides slope up. The one on their website with a bigger handle is 12"×12".
