    Ok so acidic and pungent food can mess up your seasoned surface.... Tomatoes or wine . And also super smelly food can almost stain with stink. Here comes the enamel coating. It allows pans to get super hot while still having a surface that isn't compromised by the acidity/stink of foods in repeated use like in a restaurant. Also they look nicer and can be colored....which my wife is into.

    That being said a well seasoned pan will stand up to the acidity and rebuild the seasoned surface during the next use. Fish maybe keep another pan if your sensitive.

    I have an enamel because my father in law is into Goodwill shopping and ran across this grey/brown le creuset that someone did not like. Can't imagine why. It's a beautiful tan/grey fade...../sPXL_20201027_143821333.jpg

    My wife bakes bread in it. Places parchment down before baking to lift it out and slice later. It does well to store it rather than wasting zip lock bags too

    It's a good call out. I don't typically go above 375 when cooking with them but I do have a stainless one in the drawer to swap out when I do.

    That's one way you can quickly tell the old LCs from the new, the old cast handles. I still haven't talked my mom out of hers lol.

    I don’t care about my pans enough. I usually hit them with crisco and some
    Heat every night. I’ve never had problems I’ve even done long simmer sauces in there.

    I understand them I just didn’t know this threads opinion for them or not.

    We make bread in pans too, it’s awesome. Comes out good there’s usually not any leftover that needs storage :D

    I gotta find some of that! My grandmothers meat pie recipe calls for it.
