    The Alton Brown and brining advice you’ve gotten so far is on point!
    The Publix here sells just the raw Turkey breasts packaged 2/ package in the meat section. I’ve done those the last few years and it was much easier especially for 2 people. You could also smoke them.

    Here’s my Mom’s Thanksgiving menu from her cookbook, I’ll post any of those recipes for you if you’re interested.

    In this new reality, one of the things I miss is bread. With Thanksgiving coming up, I thought I’d experiment with a couple of new recipes. Certainly not the squishy yeast bread butter rolls I’m used to making...but the end result was probably one of the best biscuits I’ve had in a long time. Flavor and texture was on point and it held up to the butter and jam test as well. 5 grams of carbs per biscuit. Now to make some sausage gravy!!!

    Made some tiny fried tacos tonight, one of my camping recipes I decided to mess around with and threw some ground bacon in with the ground beef and changed up some of the seasonings (cause I had to improvise lol).

    Small tortillas (if you can’t find them cut bigger ones into smaller ones with a cup)use the extra bits for chips!)
    Warm them up a bit on a pan or flat top then stuff them with what ever you feel like before throwing them in some oil to fry and crisp up a bit. You might need tooth picks to hold them together depending on what you use but for what I use you don’t have to.

    Filling
    Half a pound of ground beef, I threw ground bacon in for the hell of it this time. Start with a medium to large pan, fry some finely chopped onions and add in the ground beef, after they cook for a bit throw some seasoning in, I used garlic powder, sriracha powder, salt & pepper for this attempt. Mix then throw in some crushed or chopped garlic, when cooked throw in about a half can of refried beans (I guess you could make your own if you’re feeling ambitious) mix and cook all together.

    Prep a pan with some oil and heat it up, stuff the tortillas with your filling, add a bit of cheese if you fancy, throw it in the oil, fry till desired crisp and enjoy (maybe with a dip if you’re into that, I’ll usually make a garlic sauce or tahini or something):drool:

    Getting cool out. Time to bust out the pressure cooker. I turned a whole raw organic chicken into soup in about 40 minutes total of work.

    Well last night’s creation passed the ultimate test. You can always tell it’s a good soup when it is better the second day. Great depth of flavor. Will definitely be making this again and will post the recipe for those interested. Garlic Chicken Ginger Wonton Soup
