    spicy Italian. Just like me. But last time I did them I did chorizo and hot damn was that good. These were bought to grill and then the weather went warm so I used them for smoking.

    There’s gotta be some butchers around you. That’s where you can get some of the good shit like cheeks and oysters.

    @khaki2020offroad if in doubt, hickory. Just don’t go for soft stuff.

    Money shot for y’all. Sausages came off at about 3 hours, maybe 3.5 ish. Chops came off with them. Ribs are still in at hour 3.75 now.

    Here's how it went last night. Had more, but this is a pic of each cut. From left to right it's bavette, sunset/Denver steak, and picanha.

    I skipped the skewers and just did the picanha as steaks. Reverse seared them. The other two cuts hit the fire first instead.

    That little sunset steak was crazy good. Marbling was honest to goodness on par with some wagyu I've seen. I cooked it for about 60 seconds total and it was delicious.

    Just the grocery stores, and they don't count. :( This is a pretty basic small city I live in.

    I did have some pretty good luck at the KJ's, though. Walked out with almost 40 lbs of pork and beef for about 60 bucks. That's not bad for this area.
