I miss rainbow's. Didn't get to go camping this year and I don't trust the cloudy eyed ones at the market.

Love rainbows as well. Local Lakes are full of them here. 15 minute drive and I’m fishing. Nothing better than filleting them, coating them in seasoned Krusteze mix and frying them in a pan of melted butter until flaky and golden brown.

(I now use almond/coconut flour and a little whey protein powder instead and it’s almost as good)

When I'm camping and the rainbow's are jumping, I just use a little s&p (inside and out), couple lemon slices, wrap in foil and through on the fire for about 10 minutes. Never thought of frying them.

I do that with the larger German Browns I catch. That is awesome as well. My uncle taught me how to filet them when I was a kid and always brought a cube of butter and a bag of seasoned krusteze with him when he took me fishing. Give it a try sometime.

Had some blueberries left over from the other night...so I made mini blueberry pies with low carb ice cream for dessert tonight. 13 carbs and delicious.

Rainbows are one of my favourites to get out and fill my cooler and belly with, right next to brookies. Got my chance to get out there and get a few this year, a bit of butter, lemon, herbs and pepper in a skillet on the fire and hot damn!

*edit I won’t lie, my favourite way is to batter them and fry them into trout nuggets. I know it’s almost sacrilegious to do it but it’s so damn tasty lol

That is a very nice fish! Most of the rainbows in our local lakes are smaller. But the limit is sufficient enough to make it worth the trip.
