    Costco now has bagels that are boiled instead of fried. My wife got some yesterday. I have eaten three so far and will agree they are far better. Bagels are usually hard as rocks, these are soft and taste as good.

    Good Morning All. The sun surprised us today. Hopefully things can dry out before the next round. The blueberry muffins looked good...so I did some experimenting.

    @Cuffs
    1 oz of cream cheese
    1tbl butter
    1tbl sour cream (or Greek yogurt)
    Micro until softened
    Add:
    2tbl almond flour
    1tbl coconut flour
    1/2 rounded tbl of swerve brown sugar substitute
    2tbl monkfruit erythritol
    1/2tsp baking powder
    Pinch of salt
    1tsp vanilla
    1 egg
    Mix well
    Fold in 1/4 cup blueberries
    Split between 2 small round microwave dishes
    Microwave for 2 mins or until top is set
    Carefully Release from dish and brown in oven or toaster oven for 5 +\- min at 350
    6-7 carbs (total not net) per muffin
    it was amazing...
