    I'm working on cutting back on the carbs again and had some peppers that needed to be used up so I grilled up some fajitas. 30-something degrees outside but at least I didn't run out of gas this time. :laugh:

    And since Costco didn't have my go-to stand in for tortillas, Butterhead lettuce, and I didn't feel like going anywhere else to find some, it was eaten naked with some cheese, sour cream and Spicy Ranchero sauce.

    This is one I wrote down from watching the show “America’s Test Kitchen”.
    The baking soda changes the PH level and does some other chemical thing that I can’t remember???

    I’ve used that recipe 2-3 times, it’s a good one!!!
    I know the baking soda increases the browning potential of the onions and meat, and I think decreases the acidity of the tomato paste but beyond that...:notsure:

    Pressure cooker butter chicken with cauliflower rice. Cauliflower was seasoned with the same spices that went into the butter chicken.

    Definitely making it again. Just a touch less cayenne in the cauliflower.

    I was feeling lazy and did a slightly jazzed up breakfast sandwich for dinner.
    Sunny side egg, with some shaved mortadella, melted some smoked cheese on the meat while I had it in the pan with the egg, threw some caramelized onions in with it all between the 2 last pieces of bread I had lol. But I think what killed it was this mayo/maple sauce I quickly made up :drool:. Kinda basic, but

    Lol like I said my last 2 pieces, usually I turn the heel into croutons or something but I did what I had to lol.

    Son is on his way home to Hawaii where he works for the Air Force. New COVID restrictions closed all indoor seating. So I brought him home and made him a good breakfast. Not low carb but not too high either

    Missing My Last Tacoma --- Had 11 Toyota trucks in the past and many other Toyota cars too.
    ...^^^... Thats is exactly the way I like my bacon too (super crispy and crunchy) .... so hard to get it that crispy/crunchy when I eat out too. :rolleyes:

    That breakfast looks fantastic .. :hungry: .. I could eat breakfast like that for almost every meal ... :drool:

    Gravy looks good too ...

    PS ... The best to your son in the USAF ... :oldglory:

    Me too. I always cooked bacon on the stove in a CI pan and I was never that happy with the results. A roomie in college cooked it on the sheet pan in the oven... *Mind blown* Flat and perfect bacon every time and you can cook it to any done-ness you want. I typically cook it just under and freeze it. I cook it in ~10lb batches to reduce the mess and number of times a year I have to do it and just re-heat/finish it off in the microwave.

    Also, on making a mess... The one thing I do differently is I actually use a disposable foil pan and cook it on my grill. All the mess is outside and I don't have to deal with cleanup. It's also way easier to save the grease to put in the fridge. Yes, of course I have a jar of bacon grease in my fridge, why doesn't everyone?

    I made real bacon last week. My grease jar sits on the counter but agreed, if you don't have a jar, you aren't living.
