    Chinese buffets have boiled shrimp on ice a lot of times. I can eat them like that.

    I agree that 3-2-1 is a great all around method for smoking ribs. I usually remove the silver skin as well, unless you plan on letting them cook all day it does help them tender up and makes them a little easier to eat. It comes off really easy if you grab it with a paper towel. Ive tried lots of wood for smoke and I've settled on pecan, mesquite, and oak as my favorites. I got bad results when I tried using more potent fruit woods.

    Your ribs look great, so I'd keep doing what you're doing.

    That sounds good to me, like cocktail shrimp. I dont mind the cold ribs but I like them best right after they rest from coming off the grill.

    Good stuff brother!! Delicious looking, how’s the heat? I do ribs occasionally on a 40.00 barrel smoker. Usually a 4 hour ordeal but love it. Iv been peeling off the rib “paper” for sometime now. Almost a must for non- chewy ribs :thumbsup: it can be a pain in the ass but it’s well worth the fight.

    *I’m more into the sweeter flavor ribs but would love to add heat in a subtle way.

    She was on her parents undeveloped land where they’ve been taking trees out in preparation for building a house. There was a stump and it was getting dark, I can’t fully blame her. :notsure:

    I don’t care for heat unless it’s like a chipotle or chili heat, so these are more of a savory mesquite flavor, my wife says the cactus dust smells like the seasoning they put on BBQ kettle chips!

    Yeah, she said she was also swinging the front close to a tree so she was preoccupied with watching that too. I’m just glad it’s not the sheet metal and I can replace and upgrade myself. I’d have hated to take a deductible out on it.
