    Jonny, you should look up Alton Brown’s method. Basically steam them in a pasta strainer, let them cool in the fridge, and then bake them. Renders a ton of fat out and you get crispy skin.

    I usually coat the wings with some olive oil, add dry rub and then back on a rack inside a pan, for an hour at 375. It cooks out all the fat and the olive oil makes the skin really crispy. Never heard of the Alton Brown method, but I'll definitely look it up and give it a go next time!

    You don’t boil the wings, just put a half inch of water in the bottom of the pot so that it isn’t touching the bottom of the strainer or the wings.

    Yea, but then you put them on a cooling rack and let them cool down in the fridge and then bake them. It’s not a slow process, but I like making my wings that way

    Here’s the first go.

    The “A.S.” is just something I’m thinking about trying. I like it in that it’s elegant and not overly in your face. Making the letters look good as cut outs took a little thinking.
