    Got a 9lb butt trimmed up and in a brine.

    Letting it soak in the bong water until tonight then I’ll put it on the smoker around 11pm and let it ride low and slow all night. Wrap tomorrow morning then let it continue till done.

    there is enough inter-muscular fat that a thick fat cap isn’t necessary. I usually trim it back to around 1/8” thick. There is also silver skin in the crease of the two muscles near the shoulder bone that doesn’t break down during the cook, so it gets trimmed out too.

    I used to do 195 but lately I’ve been going 205-208 as I think it’s more tender for pulling and more of the fat renders down
