    the meat department at my local store (the good one with the huge selection of stuff) makes their own in house. I can get sweet, spicy, andouille...

    i used to use the tinkyada GF rice lasagna noodles but they had to be boiled first and always fell apart. i switched to the oven ready GF barilla noodles last year and they are awesome. 16 to a box, and they fit perfect in your standard 13x9 baking dish, 4 to a layer. i just make sure to get plenty of sauce in the corners as they tend to be the driest otherwise.

    basic sauce:

    28 oz crushed tomatoes
    12 oz tomato paste
    1/2 to 1 tsp each oregano, basil, thyme, garlic, fennel seed
    1 tsp sugar
    1 bay leaf
    1 cup water

    simmer for 15 to 20 and let cool. remove bay leaf

    16 oz ricotta
    1 egg

    beat together in a bowl

    italian sausage of choice. browned and drained.

    spinach if you desire. rinse it, don't worry about sauteeing it

    lots of mozz and parm.

    i like to start with a little EVOO so things dont stick on the bottom layer.

    layer alternating sauce and sausage with ricotta and spinach. light mozz on each layer. save about 1/3 of the sauce for the top to keep the noodles moist while everything bakes.
    cover with foil and back at 375 for 45. throw more mozz on top and back in the oven just a few minutes to melt it. i like to throw on the broiler to get the top cheese all bubbly and crispy.
    let sit until cheese goes below the thermonuclear roof of mouth burning temp. then serve

    I stick with Udi's. Although I'm not as much of a fan of the new recipe. I liked the other stuff better.

    Every once in a while I'll get a loaf of Franz but it doesn't have the best shelf life so if I buy it I'm committing to toast and PB&J for breakfast every day until its gone. If you've never had it it has a consistency more like an english muffin.

    Udi’s here didn’t change. Just couldn’t get it for quite a while. Now that it’s back, I called the Store Manager & stocked up. Can’t you freeze Franz? I repack everything in 2’s or 3’s.

    yeah. the stuff in the yellow and green package is changed here. used to be softer and whiter. now its drier and browner.
