A buddy of mine makes custom knives. I have been wanting get a nice Nikiri and a chefs knife from him. But I would have to lock them away so only I use them. Annoys me how my wife will use a knife, toss it in the sink and then pile other shit on top of it.

In good conscience can't do it. My pitboss still works. I think. Had a conversation with a tech support rep about pellet poopers last week. Told him he is smoking crack if he thinks they are as good as the real thing.

He started to say try Lumberjack and I finished it for him saying competition pellets. And then told him we spend half a million a year for support with you guys in NYC and I end up solving most support problems for you anyhow. Contract isn't signed yet for next year maybe we shouldn't.

He laughed and said yeah but pellet pooper heads will always defend the pellets. I told the Unit Head to go ahead and sign the contract.

Last imaging vendor we had thought we would stay with them no matter what because we had more than 10 million invested. Kicked those bastards to the curb no sense spending good money after bad. Like using pellets.

Friends don't let friends do pellets. Unless they like it and don't know better then what the hell, power to ya and go for it.

Used the gasser and grill grates tonight. Youngest son who survived advanced stage IVB cancer has an apt. for spinal shots on Tuesday long story but he has been through hell. He loves crab, at one time we would go to the local Chinese buffet and he would eat nothing but crab legs (snow crab).

For some reason this comes to mind LOL...

Tuesday have to take a day PTO and run him to the Cities for shots in his spine. Figured this weekend would be a good time to try and make him feel good. King crab legs. Filet Minion with béarnaise sauce, of course wrapped in bacon. OK maybe both of us felt good afterwards. Not sure as he is now in a food coma. Little Shit is breaking in well helping us get started like his father does.

Yes that is a Filson shooting bag on my kitchen table. F you it is my table LOL. $30 a pound for King Legs here and almost $100 worth in Mn.

    kyle and I plated.jpg

He ripped into it and was smiling, well worth it. All of it.

    Kyle and I finished.jpg

Oh did I mention fuck pellets? Just saying...

I just don't quite know what I would do if I couldn't give the firebox a poke or two while smokin'. Just wouldn't be the same for me. If Folks wanna use pellets, it's up to them I suppose but to me it's kinda like callin' a gas grill a BBQ.

    What a meal!

Hope your son has a fast recovery.

cancer fucking sucks My step dad had Hodgkins, It was like living in HELL. He has been in remission for a little over 24-25 years.

Unfortunately where we live (bought a condo) I cant have a stick burner.

Starting to think about getting a webber grill and using a smoke tube / smoke box (or getting a small external bolt on smoke injector)

Pellet poopers are evil, no good sob's. ;) Love my GMG.

Some folks have a different opinion, and that's fine. Different strokes n all.

I suspect the difference is in the amount of smoke flavor the meat gets. Maybe a stick burner smokes harder, dunno. I prefer a light smoke flavor to enhance the food, not overpower it.

I also suspect all poopers are not the same, even within the same model. Sometimes it's the operator, not the tool. ;)

Just my opinion, worth the price paid. Good luck.
Isn't that Pitboss still under warranty?

it was under warranty, but it went to the dumpster instead. I would rather spend my spare time cooking vs trying to fix a broken grill. Went grill shopping today; new one should be here Tuesday.

How often do you hone or sharpen your knives via whetstone?

Holy chit, I've done a lot already!!
I've had my Weber for 16 years, best $ I ever spent. Clean it up, as good as new. No searing burner though. Only had to change out the "flovorizer" bars for some 304. Burners starting to show their age though. Congrats on the purchase, and interested in brand/model too.
