    It’s mostly prep. I double freezer bag my cooks and slowly drop them in cold water to force the air out of the bags before I seal them. On longer cooks you have to factor in evaporation. I cook in a tall Dutch oven and I plastic wrap the top and put a towel on top of that. Even with that I had to add water to keep it high.
    People who cook often have some crazy setups.

    I also have a pair of crock pots and an electric deep fryer.

    Spicy Jerk Shrimp from sprouts. Pretty good, just open some windows when cooking lol. Along with some steamed rice and broccoli.

    Chicken Enchiladas Verde
    Super quick and easy @mjbtaco 30 min prep and 30 min bake. I’ve made many different variations.
    For these;
    Grilled chicken breast with Ole El Paso chicken rub, shredded.
    Spread refried beans on a tortilla, top with chicken, black olives, pico and pepper jack cheese and roll up.
    Spread a thin layer of Herdez Salsa Verde on the bottom of a baking dish. Place rolled enchiladas in and cover with salsa verde, top with pepper jack cheese and bake at 350* for 30 min. then broil till cheese browns.

    Last night I grilled some Halibut with a lemon garlic butter marinade and my daughter made risotto and her specialty yellow beets with goat cheese and arugula. She has a way to combine spices, herbs, flavors and textures to balance them just like the TV pros do it.
