There is some aging bags out now. Dammed if I can remember the name of them. They work really well

I fell asleep a couple of hours ago. Just recently woke back up

Ya I’ve seen em. This has worked well for me for years so I just keep at it. Trick is keeping them changed so nothing funky grows.

As long as you keep an eye on it you’ll be good. It’s best if you have a secondary fridge you can keep it in. One you don’t open multiple times every day.

That aged beef flavor is hard to beat.
