    Hey all you pizza nerds.

    I’m driving from providence to Amarillo via TN, then out to Los Angelas, (cannonball run, but not timed), then from there out to Jacksonville (bumping up from San Antonio to Austin and Houston in the way out) and then up the coast to DC and then home.

    anyway. Point is. Who’s got some pizza recommendations?

    I’m going to NYC so chances are I’ll be stopping at somewhere good going through NYC. I mean how can I not. When my wife and I went a few years back it was basically a tour of pizza places with a few tourist stops built in.

    Nashville is hot chicken but if there’s a good by the slice place let me know.

    San Antonio is a taco place and Austin is browns bbq so I’m not going to get pizza there. Houston - funny story, last time I was in Houston I found a news article for the best nyc pizza in the city. As it turns out, the article was written for Houston by Houston, as in - ain’t NOBODY been to NYC. The only thing they got right was that the pepperoni went on after the pie came out the oven. Otherwise :puke:

    LA I have a dumpling place I gotta get to apparently, but otherwise - I have no real stops planned. If anyone’s got any recommendations for pizza along the way other than nyc let me know!

    notes - not going to Denver this trip, and I will be going up to the Great Lakes this summer. Even though I’m a NY style guy, I’ll give those a go when I’m going through there.

    On the left a classic sauce on the bottom with cheese on the top, on the right Chicago style deep dish with cheese and meat on the the bottom, sauce on the top.

    There’s a new pizza place in my city and it’s so popular that I had to put myself on a waitlist to be able to order. I finally got the email that I can order, and the first available date was April 8th. I’ll update when I can finally try this holy grail of pizza LOL

    Mods? We don't need no stinking mods.
    We do Friday Night Pizza Night at my house nearly every Friday night. We miss the occasional Friday fir a HS football game or something and try to shift it to Saturdays.

    Always homemade dough. Make it on Thursday nights and let sit overnight in fridge. Allow it to rise at room temp for 6-7 hours on Friday afternoon.

    Try to vary the toppings and avoid clichés like "supreme" or pepperoni. Yawn. Every once in a while I crave a sausage/mushroom/black olive. But even then, I use good sausage, fresh shiitakes and kalamata olives.

    Been doing this in a 500° oven with pizza stones for...20 years now?

    My wife got me a pizza oven that fits inside our pellet smoker back in November and I'm loving that thing now. Set the smoker on 350° and the pizza oven cooks around 550°. (Any hotter than that and the crust burns before the rest of the pizza is done.)

    Some favorites of ours throughout the years:
    Chicken/blue cheese/caramelized onions
    Spinach/bacon/alfredo/carm. onions
    Roasted beets/beet greens/goat cheese
    Chicken/bacon/ranch/jalapeños
    Smoked pork shoulder/BBQ sauce/red onion
    Spinach/feta/garlic/pine nut
    Eggplant Parmigiano
    Andouille sausage/roasted red pepper

    I'll have to take some photos some time, if anyone is interested.
