    This cut was cheaper than a tri tip so I’m going to try it out. Any suggestions on cooking it? Like a tri tip? 250f for a couple hours then sear?

    It’s very lean. Smoke till you have the IT to your liking then sear. On that cut wife and I like it medium. Want take long on a 3 pounder. You do good just watch it closely.

    Definitely a fan. Might be better then a bone in rib roast.

    SPOG rub and ~250f for almost 3 hours. 30 minute rest. Skipped the sear in favor of the rest. A little over cooked but nobody eats meat in my family as rare as I like it. Tender cut of meat regardless!

    Doing my first brisket today on the RecTeq. Super tiny, just under 3.5# so no idea what to expect for cook time.

    Haha, I've been trying to keep track as best I can of my first cooks, this is my first Brisket. Realized I had left my phone on my desk (which is between the kitchen and the smoker :rofl:).

    It's wrapped in paper now, should hit 203 in the next couple hours so hopefully can spend some time in the cooler before supper.
