    Ok.. I might have crossed the lines with this one.. I made Mojo Pork in the Crockpot... Meanwhile I made a homemade enchilada sauce and at the end of the day I put the Cuban pork into the Mexican dish .. and I'm calling it a freaking success!

    Also.. by making my own enchilada sauce and using corn tortillas.. it's all Gluten Free.
