    Trying something new today... one of the local grocery stores always has fresh made brats in a ton of different flavors... so I picked up a few flavors and decided to cut the casings off and cut them in half and make brat meatballs... and of course what's a smoked meatball without some cheese?

    How's this for a smoked green onion brat meatball stuffed with fresh mozzarella?

    Took about 45 minutes in the 250F smoker.. already have a pork shoulder going so why the heck not??

    nice

    I make turkey burgers a lot with equal parts ground turkey and Jimmy dean sausage. Comes out real good. Sometimes/usually a little shy in the sausage compared to turkey though.

    actually recently I’ve made a new favorite - turkey burgers with quest fresco and jalapeños. Came out real good. Actually might have just decided what I’m making for dinner tonight....

    It used to be cheap which made it great for cooking for lots of people.

    Now that it’s cost* rivals actual good cuts of meat I don’t hardly buy it anymore. Don’t pay more than $7/lb IMO.

    That being said I’ve cooked so many tri tips that when you nail it... it’s really good. Kind of like a brisket.

    Although most tri tips are known because of the rub people use... that says something.

    Also I don’t know about beans but I do know that cutting it properly pays dividends.

    I don’t get near enough smoke flavor from my Traeger so you’re probably right. Great smoke ring though.

    It’s just not for me, I suppose. It would make more sense to me if the cut was cheaper.

    I'm just pushing buttons really...I'm satisfied with my results but like bourbon..everyone has their own tastes!! And yes.. I was surprised by the smoke ring as well

    Amazon has cheapo Chinese knockoffs. Thermoworks makes a quality product, imo. I have a MK4 and a Big and Loud Timer. Both work well.

    I also have a 4 probe Inkbird remote thermometer that works and was $40 with a discount code.

    I’ve been happy with mine. I have the Signals 4 channel and the thermapen classic. I will say, I had some problems with the thermapen but I contacted the company and they took care of it very quickly. Excellent customer service.

    I’m happy with the smoke flavor I get out of mine. But.... when doing a long cook I use the super smoke feature and I run a smoke tube. If you cook at 225 or lower they do fine. Maybe even up to 250. Anything above that and they run too efficiently to produce much smoke.

    Can’t wait for the grocery store tomorrow. Lamb on discount yee haw. Probably get a rack or leg if I can find anything. Ham too but I’m not usually a fan of spirals. I’ll probably grab one and freeze a bunch though. Ham and Swiss melts are an easy no mess oh shit I need lunch meals.
