    It depends... depends on which smoker I'm using, what other foods I am cooking, and to some extent, which rib recipe I am cooking.
    Typically I will cook Baby Backs or St. Louis ribs on a pellet cooker. Usually I'll smoke 'em for 3-4 hours, wrap in butcher paper, cook for another 1-2, then finish them for another hour or so. Lots of variables though. This schedule depends upon whether or not I am saucing them or "dry cooking" them. And it depends if I have anything else going on around the house while cooking.
    It depends...
