I recently bought a 2021 Tacoma sr v6. When I first drove it off the lot, the miles to empty gauge read 375 miles till empty but I have not been able to duplicate that in my subsequent fill ups, my first fill up, it read 350, then 340 and now it reads around 330 every time I fill up the tank so my question is, is this normal?

Haha yup...mine said 288 miles to empty after I filled up earlier today. It's steadily tanked since new, about 3300 miles now.

I don’t why it’s too low. Mine always has been 385 miles to empty on a full tank

It changes as you drive, enjoy the truck and you'll see it varies.

Only aesthetic mods so far Leer 180 cap & Clazzio covers on order.
"Normal" depends on the driver and his/her driving style.
The Taco kinda bases the number on previous performance and it will vary.
It's not exact and will get better (more reflective of your actual fuel mileage) as time goes on.
I base my gut guess on remaining fuel (and miles) by the miles driven since last fill-up and the fuel gauge.

As everyone else has said, it makes that calculation based on your driving style. When you drove it off the lot, it had no data to run on so it gave you its "best case scenario" or at least a reasonable scenario. I just finished a 3200 mile road trip from Colorado, where I live, down to the coast of Cali and back - my fuel economy went from 19.5mpg up to nearly 22mpg (calculated when I added gas - the average over the tank) but the "Miles til empty" never went above 350 even though at 22mpg I should be pushing somewhere north of 450 miles on the tank.

My guess is it's either an average over the history of the vehicle, or an average over a set period. Additionally, I've noticed that my truck will consistently project I will be empty with 2 - 3 gallons still in the tank.

I track my fuel economy and use with a separate phone app, not the onboard info.

Edit: I just checked my log - I actually hit 22.31mpg on one tank, but I filled up in Dillon and then rode down out of the Rockies on cruise control, so it was a long, slow downhill. Not really realistic data.

I don’t pay attention to any of the gas mileage stuff it gives me. All
I know is a I can drive 355 miles until I need to fill up the tank.

Seems like the last indicated half of the tank runs out quick.

I actually watched this pretty closely on the last few tanks on my trip back, and found the opposite. My truck was consistently giving me somewhat conservative estimates, and I'd typically "gain" about 10 miles of range for every 200 driven. This was only highway driving, though.

This was right before fillup. I do mostly 3 mile trips with many stop signs and red lights. On a 3" lift and 34s. Not corrected for larger tires. Not too bothered b/c i only do 5K mi/yr.

    Pumped 16.1gal, so a calculated 11.8mpg.

A little less than 1/4 tank left and only an indicated 58 mi range.

Your truck is getting to know you, be nice to it. Buy it goodies and pay it compliments often ... :D You will see it fluctuate as you drive it and rack up miles, mine did.

Normal. Occasionally if I run it very low, it’ll shoot up to ~420 for awhile before it drops to 340

Wintertime I have about a 240 mile to empty after fill up, summer 265.

Truck is thirsty and I don’t care, smiles per gallon are paramount for me.

Mine will vary between 385 and 415 as an estimate. However, I tend to fill up at about 1/4 tank. Also, the 2-3 gallon range is normal. It's partly a contingency amount and partly an attempt to save your fuel pump. It's not a good idea to push it into that if you can avoid it.
