    :rofl: I forgot I can smoke this weekend! Need to stop at the store on the way home and get some goodies. Might try to do some poor mans burnt ends just for S and Gs.



    Addition:

    got some pork ribs. Hot Italian sausages. Chorizo. And a pork loin. I’ve gone very oink based. Have some chicken thighs in the freezer I’ll probably grab some of those and start a brine tonight on them frozen and get those going too. No poor man burnt ends today but will probably plan on them in the near future. If it gets cool enough later I might run out and grab some big cheese blocks and put those in for Memorial Day burgers.

    I'm smoking a pork butt for carnitas tomorrow so I've got it marinating in oil, salt, lime and orange juice.

    While cutting the butt in half, a couple of smaller pieces came off so I put some oil and Pork Barrel on one and tossed it on the smoker. Getting close - it's at 93 degrees.

    It's fantastic!! Just enough heat to know the habaneros are there but not so much that it ruins the rest of the dish!

    Just put it in an aluminum pan and covered with foil until it hits 203. Which will take longer than I'd like it to, I'm sure.

    I refrained from taking off the aluminum foil for an hour while it rested but I could not refrain from taking a chunk off of the end.
