I just purchased a 2021 pro automatic, but my 2017 sport automatic is faster- both empty-
    Am I missing something here?

It's a sport for a reason. Its faster, duh.

Your new one is being broken in and everything is still learning, probably.

Totally taking a guess here. The Pro is lifted so you'll have more wind resistance. Could be making a difference. I wonder if they're geared differently too

    Faster how?

I thought they were all limited to the same top speed.

Pro skid plate are really heavy. Those colored letters make major difference.

From a standstill, the sport launches faster all the way to 60 mph

My guess is that the Pro has no air dam and heavy skid plates.

I think this may be part of it. There are several differences in the pro vs the sport that could cause this effect. Wheels, tires, slight lift, the pro has a bigger rear diff than the sport, toyota said they made the interiors quieter in like 2020, so more sound deadener, power seats weight is pretty high compared to non power seats too. Every little thing adds more weight that will slow the truck down.

You're probably right, its been scientifically tested on TFL, the 2021 Tacoma vs a 2013 or something FJ. The FJ and the 4Runner both beat it.

My 17 sport is lifted a 1/2” taller than the pro and I removed the air dam a long time ago

Looks like they should be the same. Someone above said it though, it could just need to be more broken in.

When a Camry will smoke either one, does it really matter?

But to answer your question; weight is probably the big difference.

Tires? Tire Weight? Firmer suspension? ECU? Pavement type? Lots of variables.

What's strange is that someone would bother to quantify how much slower one Tacoma is from another.

Define faster - actually timed from 0-60 OR just feels faster/slower.

Most likely going to boil down to tires and gearing. Smaller (and lighter) tires are easier to turn and will accelerate faster.
