    Morning Scott. I like that method of travel when I can. Last time coming back from the HTX meet, I was going to take old 90, but I missed it getting out of Houston, and then just stuck with 10 because there wasn't any traffic after Houston.

    :pccoffee: Good Morning SA! Another 2/10" today brings me to 8.25" for the month! Come July we'll be begging though. Guess I'm going to try putzing on the truck and in the garage until it dries out.

    I can give the Smoker a B+ on it's maiden voyage, given that four of the six hours were in the very consistent rain. That made tending to the 321 ribs at the "hour" marks a little wet and difficult. Messed up the cook more than the BBQ. They were TOO tender, could barely cut them, but the wife and son like it like that, so it was OK. Could have put sausage on the warmer rack sooner too. And I seemed to use more fuel than expected, but that could be the wet too, but I ended with fuel in the hopper.

    For as good of reviews as the grill gets, the App gets terrible ones. I didn't set the meat probe temp, but just let it measure - that worked. And the fire temp and timer part of the grille works very well. For the first hour and a half, app worked great, but I was following radar, and I left it minimized and it lost contact. Went out with the phone and umbrella, pushed the little button, and it connected right back. But somewhere in the middle phase of the ribs, I lost it and could not get it back. Now, it was pouring rain, and all I needed was a timer, so I just set my watch. I will reset it up again now that it's in the back yard - when it's not raining. When it was running correctly, it was perfect, so I don't think the app has a serious problem unless it's not liking being minimized. Might just use my old phone as the monitor if that's the case. We'll see.

    Do you cook the ribs, but too much where the bone pulls out or seperates from meat, correct? That's usually how I cook mine, easy to tear meat, but not pull the bones out(that is over cooked imo).

    I usually season then leave on counter for atleast 30min, then place on grill for approximately 3.2hrs to smoke/cook on the new grill I have.

    That's how the 321 recipe runs them. I like mine a little "drier", so they stay on the bone. But 321 will shrink them back when you wrap them, and also that two hours is what really tenderizes them. But, that tender is 2-1 more popular here, so all good. I think I am going to experiment with the wrap time next time, to see if I can get a good compromise. These were MORE tender than the vertical, same recipe, but the rain gave me fits while I was doing the wrap and adding the beer. At least the grill did the fire work for me, and I LOVED that part.

    Ah OK, I don't wrap them at all, start at smoke/low temp 160(will have probe to confirm), slowly increase temp to 250 over the 3 hour period.

    :pccoffee: Good Morning SA! Looks like a day with overstated rain chances again today. Yesterday morning was the end of anything large, it all went East. Nothing on the radar show this morning. Filled LBRs' bed with cardboard, so make a recycling run and a couple errands, and go from there.
