116 yesterday in Phoenix. 90 in Happy Jack, AZ. The biggest difference is the evenings. Low of 91 in Phoenix and low of 58 in Happy Jack.

On a clean vehicle and in the shade. Tear off a piece and flatten it out, spray a small area at a time with quick detailer, then lightly rub the clay over the area. Works good. I've used a solution of carwash soap instead of the quick detail spray, it just need a lubricant. Also, periodically knead that piece of clay and reflatten it. After awhile it will have picked up much garbage and need to be tossed out.
Apologies, because I'm certain you asked someone else, they might have better direction.

 

Any difference between the white or yellow?

I have no idea on that. My first experience with clay was so long ago that I had to buy it at a auto body supply store. Since then I've used both the yellow and then white again. I have some of the white stuff left now.
