    I didn't turn my nose up at smoked burgers. They are ok. I just prefer a good char on them. My wife does too. Gotta keep her happy. ;)
    We also like smash burgers cooked in a CI skillet, in bacon grease with grilled onions. :thumbsup:

    While I like any burger, I really like a burger I did a few weeks back. I smoked it on mesquite until about 140 degrees then threw it on the 800 degree searbox until 160 or so. I melted a pat of butter on the last flip. It was tasty.

    Smoking a rump roast first time with that LEAN cut (from my 1/2 angus steer), dry rub overnight, wet mop, 225°F mesquite

    What internal temp should I shoot for?

    Just going to slow wet cook until it falls apart. Simple mop plus I'm smoking it in a cast iron frying pan!

    Came out ok NICE smoke ring. Sauce was good. Meat tender.

    My big mistake? Mesquite for a LONG smoke. Not good. Too much. Should have used a sweet wood.

    If you want to try something new if you do a prime rib roast with your new kettle stuff here's what I did with this one and it was as good a prime rib as any I've ever had. This recipe actually was for rack of lamb. I thought it would be well suited for prime rib and it didn't disappoint. First liberally rub the rib roast with coarse ground pepper and coarse ground salt. Then go ahead and put it on the grill. I did mine at 250 - 275 degrees. After about a half hour baste all sides with the following. 6 tablespoons melted butter. (Or you can use olive oil for Paleo) 1 teaspoon crushed rosemary and 1 teaspoon crushed sage. I pulled mine at 125 degrees, wrapped it in aluminum foil for 45 minutes while the stuffed jalapenos cooked.

    2 cups sweet cherries, pitted (about 50 cherries)
    1/4 cup bourbon
    1 tablespoon sugar
    1 cup fresh squeezed orange juice (about 3 medium sized oranges)
    2 chipotle peppers (from a can of chipotle in adobo)
    2 tablespoons sauce (from a can of chipotle in adobo)
    1/4 cup apple cider vinegar
    1/4 teaspoon kosher salt
    1 tablespoon smoked honey

    Everything in the pot except the honey. Brought to a simmer and let go for 15 minutes.

    After 15 minutes, put in food processor to break everything down.

    Back in the pot for another 15 minute simmer this time with the smoked honey added.

    Chicken legs trimmed on large end so they stand up on their own.

    Smoked for 45 minutes at 350 then dunked in the sauce.

    10 to 15 minutes to set the Sauce, then a second dunk in the sauce. Another 10 min or so to set that layer of sauce and time to pull them.
