    Tri-tip over oak on the Traeger at 180 until 115° and then seared on the new webber. Came out fantastic.

    Two 7 lb. butts over charcoal, hickory and apple w/ homemade rub. Started late, like 1:00 p.m., hit 195F at about 3:00 a.m. Got to bed at 5:00 a.m., visiting nephew is up at 8:00 a.m. time for coffee.

    Hoooooo leeeeeeee sheeeeeeet this sounds amazing. I know what I'm making. I just bought some thighs for Ss and Gs (I usually cook with them) so you're a man after my own heart. This sounds amazing. I've had a few to drink today and don't have all those fixins (I'm not a big cilantro guy. Not a soap victim but I just don't use it) so I'll swing out get the balance I need tomorrow and do these for Tuesday night.

    I'm not a huge cilantro fan, either, but it's a regular request for me to make it when my niece is in town. I think you'll be happy with it. :)

    Finished a fermented Serrano and agave hot sauce. Retained the simmered brine (to stop fermenting and evaporate the water) for a chicken wing brine. Added pepper corns and red chili flakes. Here’s hoping science pans out for me

    I have a Lynx for gas (line comes from the house) and a Big Green Egg for charcoal…if you have room for both I would go that route.

    Yeah, that marinade is amazing! I didn't take any pics but I served it over rice noodles with the sauce. It's definitely going in the recipe book. Thanks for sharing!

    The fish sauce is a bit over powering but thankfully it cooks off.

    I accidentally cooked all my chicken last night :rofl: so I will be doing this soon but maybe not tonight. I might not use the sauce though, I am not a fan of vinegar - at all.

    The vast majority of the vinegar cooks off. And keep in mind that there's an equal measure of sugar in there, too. :laugh:
