Brisket update. It sucked. I'd rather eat a hamster liver than that shit....wait......okay, chicken liver in pee.
LMAO. I just don't do brisket worth a shit and don't know why. It was only $11 tho. Thank God for the Commissary.

I had not heard of that -that sounds alot like scrapple without the corn meal? On the scrapple thing - I love the stuff . around here in German ancestry Central Mo Scrapple is also known as "Panus" I was told this is the same, but a more authentic German name. I have been eating scraple/panus with fresh wild mushrooms -in particular the "ringless honeys" and pieces of the "hen of the woods' Grandson and I went out in neighbors yards around us and found about 24 lbs of the "hens" on Saturday morning. found then all under and white oak trees and stumps

 

You need to pull the brisket when it reaches the "stall temp " and wrap it in tin foil with a liquid of you choice (beer works ) -then continue to cook it for a total of about 9-10 hrs total. I hold my temp at around 225. You can always do a ending sear on it if you like the crisp bark on the meat. Then pull it and seal it again and let it "rest for 30 minutes before slicing.
I normally do not like the "crutch " method (foil wrapping). but that works best for me. BTW -buy yourself a probe thermometer you can leave in the meat -- makes your cooking almost foolproof. Also "stall temp for brisket is about 155-165.
