    my son and Lance are going out in the morning and look for the deer i wounded just in case it died or the coyotes got on it. im going out over the weekend to do the same.not worried about the rack but would like to shoot him so he doesnt go around on 3 legs.the patch of woods is our santuary. no hunting, shot him across the road, he followed the drainage along the road then cut right. its surrounded by all fields and is always full of deer and the best bucks we have.marked the 1st and last blood for the boys.     Picahna... Found this guy while I was breaking the hams off the pelvis. I trimmed the fat and threw it in with the tenderloin I'm cooking tonight

    Yeah she shot a doe and a button head last year. I hadn't shot anything but yotes and Bob cats in 2 years. Totally fine with that too lol as long as the freezer is taken care of

    Got one ham parted out. Separated the bigger roasts out, removed all the silver skin and cut everything else thin for jerky. Seriously considering salt curing the other ham. I did a test on a chick of backstrap a couple years back and it tasted just like salt cured ham (after the pelicos was trimmed because that was uneditably salty) 1 because is like country ham, and 2 because I'm tired of trimming right now lol

    Trimmed all the fat off (salt doesn't penetrate fat) eyeballed 2:1 salt and brown sugar. Covered and then went back over everything with salt to make sure it was good and covered and in true Alabama fashion, it's currently 70° so ice bag on bottom bone side down in the cooler... See ya in 3 weeks? Well besides refreshing the ice supply of course.
    Any tips from anyone that has salt cured anything before?

    Seems on a hog ham, you need to cut the joint down to the bone to pack extra cure in there... But I only had the femor bone in my hams and both ends of the bone is visible so it should be fine. When that ice melts down in a couple days I may rub more salt/sugar on. I did read not to use iodized salt which is luckily I picked up non iodine yesterday. 18 days is what the recipe recommended and it's on the internet so I trust it...
