    Better non-stick and easier to clean. Old cast iron was smooth but very very expensive. I've seen old pans go for $600 or more.

    Keep using it and wiping it down with high temp oil after rinsing. Bring it to the smoke point, quick wipe with a dry rag, and store. It will reach a point where you don’t have to do it as often, but it is more difficult to maintain. I can scrub mine with Dawn/light scour pad at this point without ruining the seasoning — keep after it!

    Made this for my wife for christmas, just extra parts and bolts from my toolbox at work. Timing sprockets, valve springs, and the arms are made from snap on puller arms that have been in that toolbox since my father wrenched. I knew what i was going to do with the arms before I even had the body built. She loved it so much she demanded I build her one every year now.

    I would work on it during lunch breaks for about a month, halfway through i had my doubts and almost scrapped it. Her face when she opened it made it all worth it, she had no idea whatsover what was in that box.

    We're the type that buys what we want when we want it, so it was nice to give her something that she could never find on a shelf.
