    Tonight’s version of what we call “turkey surprise”.

    Ground turkey with misc add ins.


    Onions, bell peppers, jalapeños, squash, corn, petite diced maters…..a little bit of this, a little bit of that. Makes for good leftovers. :notsure:



    What do y’all make for a quick-ish after work meal? Bonus points for leftovers!

    is the chocolate from scratch? I tried to make it from scratch a while back but it came out terrible, still not sure what went wrong since it was a seriouseats recipe

    I did 12 oz of chocolate chips. 1/3 semi-sweet, 2/3’rds 60% dark and 1 Tsp of shortening, it keeps the chocolate soft. I followed this exactly just added the shortening.

    240* is the soft ball stage of any candy. If you don’t have a candy thermometer you can drip a drop of the Carmel into a glass of cold water. If it forms a ball and drops to the bottom your good to go.

    Didn't know that! Have you ever tried to to temp your candy with a normal instant-read thermometer to compare it to the reading from the candy thermometer? Would be interested if its really worth it to have a separate one

    Made a large pot of Jambolia for dinner. It has red bell peppers, celery, tomatoes, chicken broth, onion, rice and the only meat in it is chicken and kielbasa sausage. The seasonings used are all spice, thyme, and tabasco.

    I have a meat thermo and a candy thermo which is a PITA because your constantly stirring the candy. I don’t have an insta read so.... After my Mom taught me the glass of water trick, I’ve never looked back.

    Man you can get one for like $15, I find it a lot easier to use for most things than my meat thermometers which all have cables (except the MEATER probe I just got for christmas, haven't had a chance to try it yet)

    I'm not aware of an instant read that will go high enough to replace a candy thermometer.
