    I may have miss-represented. I should have said they used to be that way.

    They’re much better now. We were bought out by a much larger company. The new company was perplexed why so many people had huge PTO balances. When they investigated they found people were unable to actually get PTO.

    A big part of the problem is it’s food service and chef culture is you work really hard, really fast all the time, take no breaks and do it until you die. Chefs don’t retire, they die at the stove as the saying goes.

    The problem is I left regular restaurants and jumped into corporate dining to get away from that nonsense.

    With my own team my policy is give me enough notice (like a week) and you can have whatever time off you want. pretty much only saying yes makes is a lot easier.

    that's what mine did. But it was visually obvious because the axle looked like a fractured arm, you could swing it around like a noodle when it was pulled off.
