    I hear that, I use lump in my drum but for some reason still like briquets in the kettle lol

    Costco has the professional bags right now and they burn HOT and FAST. I don’t like them, I stick with the original briquets. You should still let all charcoal smoke out before cooking on it, if you don’t already.

    I'm torn. I love the simplicity of the pellet smoker, but miss the flavor of my WSM.

    I started with a Traeger and have pretty much cooked on every type of dedicated smoker. I have a Hunsaker drum now that's effortless to dial in and cook for 15+ hours. But what's funny is I still find the most enjoyment with my 26" kettle with a few Slow&Sear mods.

    If you use a chimney starter they light and get going good about 15-20minutes. They do make a lot of smoke at first

    Yes, but you can use them as soon as they stop billowing smoke — they are hot enough to combust rather than smolder.

    It's got some Mods
    Ever since Lowes and Home Depot stopped having those awesome half off Kingsford sales I started using royal oak and it has treated me well. Recently however, I purchased a bag of KBB and it has been burning just fine.

    After the briquette is lit it shouldn’t smoke that much.

    I was thinking how do you smoke with them?

    I pour a line around the outer edge and do a snake type method. Sometimes if I’m trying to dampen the temp too much the charcoal will smolder and give off a lot of dark grey colored smoke. Generally it’s not an issue though.

    You are going to get more smoke initially with any briquette because of the binding materials used in processing. More smoke until they are fully lit. I grill and or smoke on a WSM and a couple of Weber kettles. Lump and briquettes depending on the cook or what I have on hand. Cheers!

    Awesome, thank you. Pretty cool stuff. I normally sear inside on a cast iron but that can give off a lot of smell and mess

    Looks like it from what others have posted, I just know what they are…I don’t have any lol

    Yea it looks like he has them flipped to give that same sear as cast iron. I don’t have any, but am thinking about getting a small section for my gasser
