Looks like I’ll be giving the brisket a try Monday. Any tips or recommendations?

Watch this a time or two. He makes a lot of videos that are well done.

I typically do a combo of black pepper, salt, onion powder, paprika and some garlic powder. Start the cook overnight low and slow, check in the morning and wrap (I use butcher paper) at the stall when it gets there. Dinner time is when the brisket is done, don’t try to plan a set time lol. Just enjoy the cook man, it’s a long and slow process.

You doing burnt ends with the point? Do you have a full brisket or brisket flat?

Wrapping in butcher paper is far superior to foil. Extremely important to let it rest. Rest it wrapped in a cooler for a MINIMUM of an hour, two or even three is better. Look to slice when it drops to 165°

Most importantly, post your address and have plenty of beer on hand.

Oh damn, that guy has a sweet setup. I have to load mine up with chips every hour so an overnight burn is out of the picture for me.

I grabbed a 5 pound flat cut today. Been doing some research to get my game plan going. Good stuff on the butcher paper tip, thank you!

 

I took the easy route with a pellet burner so I’ve got the convenience of overnight cooks. I have plans to get a barrel or charcoal setup in the next year or so hopefully. What are you running for a setup?

The 5 pound flat is perfect; no need for an overnight cook and it will be sliced brisket which is great. You don’t have to worry about burnt ends or anything. I would suggest a heavy covering of whatever rub you want to use and then I typically spray with apple cider vinegar and whiskey combo every hour or so until wrapping. Dennis is absolutely right too, you want a good rest at the end of the cook. Wrap it in a towel and set it in a cooler for an hour or two.

I have a smaller Master-built electric smoker. Long story short, my mom had to severely downsize last year, and relocate. I drove out to Illinois (where I grew up) last May, rented a 12x6 uhaul trailer, and loaded what essentials were able to fit in the trailer my truck and her car, and drove her to my Grandpas in Arkansas. The smoker would have been left behind, and she insisted I take it.

I always enjoyed bbq. Growing up, my dad would smoke some pulled pork for football games and I would enjoy the leftovers for weeks. And I love the occasional stop at bears bbq, or when the office would surprise us with some of it. If my mom hadn’t convinced me that there was a little extra space to fit the smoker, I am not sure if I ever would have dabbled in smoking. Im glad she did though.

Also, tw for the win on clutch smoking tips between you with the butcher paper and Dennis with letting it rest before cutting into it. And whiskey/apple cider vinegar? Hmm

As far as an overnight smoke, look into using a smoker tube. That can give you a multi-hour smoke without reloading. YMMV.

And...did you consider leaving the trailer and hitching up the jet...

Good morning CT.

I was surprised to see an inch of snow this morning. Good thing I didn't pull out the WeatherTechs.

 

Morning boyos. Almost April showers.

 

No snow but certainly cold and windy. Had hoped to finish raking the lawn. Maybe this afternoon.

 

Took a ride to the other side of the state yesterday for some new wheels. 4Runner TRD pro wheels with BFG KO2's. 265/70/17. Now I need some TPMS sensors, he kept them for his new wheels. Also looks like it needs a lift. Just doesn't look that good without it.
