    Bought an Ooni-Pro-16 middle of the pandemic - man o man o man... got no images of the pizza's they don't last long LOL.

    This thing cooks 'em up in about 90 seconds at somewhere nearing 900 degrees.

    I use '00' flour for the dough and let that dough setup at least 2 days ( cold-rise ).

    (Bowing Head)…Amen. The start of my journey left me with hyperthyroidism. Never gained weight. Now no thyroid…if I think about food…I gain 2 lbs. The treatment has pushed me into a diabetic condition that I now control with a low carb diet. Good thing I have a love for creating great food minus the carbs.

    Modified Fat Head Dough

    Pre heat oven to 425

    In a large microwave bowl add

    1 cup shredded mozzarella
    2oz cream cheese

    Microwave for 75 -90 secs (don’t let it burn)

    Stir well (should be soft and creamy)

    Add 2/3 cup almond flour
    Add 1 1/2 tbls coconut flour
    1/2 tsp salt
    Add 1 egg

    Mix well until fully blended (you may need to blend it with your hands)

    Form dough ball and coat with 1 tbls olive oil and roll it around until ball is coated

    Place on 12/12” sheet of parchment paper

    Cover with another sheet of parchment paper

    Work with hand in circular motion until you make a round crust approx 1/4” thick

    (Last couple of times I have also had to spray the parchment with canola oil to keep it from sticking to the paper.)

    Lightly oil pie pan

    I was using a regular pizza pan, was going to try a pan with holes, now I will try the cast iron pan instead.

    Transfer crust to pie pan smooth out bottom and sides. Fill any holes with excess dough

    Lightly Pinch top of crust around edges

    Poke several hole with a fork in bottom of crust

    Place in oven for 10-15 min or until very lightly browned

    Take out and let cool

    Crust will firm up as it cools

    add sauce
    (I use Alfredo and light red sauce)

    if I’m making a gourmet pizza I will add 8 thin strips of cream cheese arranged in a sun pattern. Then sprinkle with minced garlic.

    cheese (mozzarella and cheddar blend)

    toppings of choice

    more cheese (mozzarella)

    bake for 12-15 minutes

    carb load quoted earlier was for double pepperoni

    Keep in mind that because this crust is gluten free it won’t be chewy or stretchy like regular crust. You kind of want this crust to be a little crispy…like a good thin crust. Im currently experimenting with vital wheat gluten which is keto friendly but adds the benefit that regular flour has without the carbs. I will keep you posted

    Tried out the new pan, and experimented with the crust recipe. It added a carb per slice (7gr)…but I think it was well worth it. Pepperoni, Bacon, Basil…great blend of flavors. Crust was almost perfect, will keep working on it.

    Our Local Fred Meter’s (Kroger) had a bunch and they were on sale. Originally $59 got it for $39.

    This is similar to my previous recipe but I added vital wheat gluten. Hoping to get some chew. I did not accomplish that but it has great flavor and better texture. Caution: If you have Celiac or are gluten intolerant this is not the recipe for you. Vital Wheat Gluten is still carb sensible, however it adds a carb per slice in total carbs. 7 per slice. (pepperoni, bacon, basil, garlic)

    Modified Fat Head Dough with Vital Wheat Gluten

    Pre heat oven to 425

    In a large microwave bowl add

    1 cup shredded mozzarella
    2oz cream cheese

    Microwave for 75 -90 secs (don’t let it burn)

    Stir well (should be soft and creamy)

    Add 1/2 cup almond flour
    Add 2 tbls Vital Wheat Gluten
    Add 1 tbls coconut flour
    Add 1/2 tsp salt
    Add 1/8 tsp xanthum gum (binder)
    Combine dry ingredients with cheese as best as possible
    Add 1 egg
    Mix until fully combined
    Coat with olive oil (1-2 tbls) roll dough ball
    Knead ball for approximately 7 min

    Spread out on parchment paper until size of pan. Pinch end to create a lip.

    Transfer to pan

    Bake until golden brown and mottled

    Add toppings

    Okay today I had some time to experiment on a low carb yeast crust. Think I may have stumbled on my favorite thin crust (up to this point anyway) Caution: not gluten free. Great flavor, good texture, and some chew. It will be my go to if I have time (as it literally took most of the day to proof). Total Carb load is 8 grams per slice. Still very respectable.

    In small dish proof 1tsp yeast in 2 tbls warm water (110 deg)

    1/2 cup Almond Flour
    1/4 cup Vital Wheat Gluten
    1/4 cup Oat Fiber
    1tsp baking powder
    1 1/2 tbls monkfruit erythritol
    1/2 tsp salt
    1 tbl sugar (yes I know not keto friendly…but yeast feeds off the sugars in flour. Almond, Oat, and Vital Wheat Gluten do not have the sugars to sustain growth. Most of the sugars will be consumed by the yeast. However, I have included the carbs in the carb count)
    Mix dry ingredients well

    Heat 1 cup of water to 110 deg (hotter will kill the yeast)

    Once yeast has proofed (frothy) add to dry ingredients and mix well

    Add 2 tbls olive oil and mix well

    Add water (start with 1/4 cup)

    mix well until dough has right consistency (add more water a little at a time if necessary)

    Knead for 10 min

    Form into ball, coat with olive oil, and cover. Place in oven with the light on. Until ball doubles or triples.

    Pull ball out and knead 10 times

    Spread on parchment until the size of pan. Bake for 25 min at 425
    Watch for edges to brown
    Brush with garlic butter
    Bake until crust is firm

    Add toppings

    i picked up an Gourmia 8 QT Digital Air Fryer on sale for $59. never had so much fun in the kitchen, in such little time.

    8" pizza, boboli crust, red sauce, mozzarella, red onion, mushroom, chopped cilantro, peperoni--cooked on basket, crisp up like bacon, so nice!

    I was just about to comment on here that I had a mis launch off the peel and onto the hot stone….dough was initially too sticky and it kinda made a pseudo-calzonic puddle

    I have a 7 year old and a vegetarian at home, so cheesers are a mainstay around here :rofl:

    Costco has to put at least two regular sized bags of mozz on their pizzas. For $10 it’s a delicious and impressive pie.
