    I had one made of one of the oval oil drums with water heater burners in it but we cooked it to death over the years

    I made a small one out of a "pancake" compressor tank once. It worked, would've been great for camping but real limited on space. Those small kettles work great.

    That’s what I travel with a small Weber kettle grill. It’s great for steak and quick hot grilling I have the larger one at home with the indirect kit and it does some killer ribs. And I do Alton brown skirt steak on it occasionally with hardwood lump.

    Martin64, you have a nice build going there. Offset or will you have a small fire in the tank? I see another smoker in the background, several propane tanks and grill. Smoking can be a hobby or an addiction.....

    Those little kettles are awesome. I have a propane grill that I use sometimes but it's such a mess. The little Weber is still my "go to" when I'm not doing something big. But I have cooked a whole weeks worth of meals for 1 or 2 and it always turned out great. The big smoker will get used quite a bit, but mostly for holidays. I've got a big cook or two or 3 planned for the holidays. Whole brisket, rib roast, ribs, chicken quarters. Probably won't do a turkey this year for the holidays but I may slip one in sometime. I like to fry the holiday turkeys. I can get all the mesquite I want so smoke wood is never a problem.

    Off set. I like a good wood smoke with charcoal. I usually go a little hotter than most and not as long. I like a little "pull" in my ribs. Fall off the bone is a little to soft for me. I think my longest smoke was somewhere 8-9 hours. But usually anything around 5-6 I'm good with. No gadgets. A good pocket thermometer is all I use. I usually plan it so I'm close by to keep an eye on things. But summers are too hot and since I started my business 3 years ago my winter weekends are too busy. Usually Christmas/New Years is when I have the most time. Sundays I'm home and off from work and business so I can still get some in.

    What you see there are the toys I keep at work. The black one with 2 stacks I build a while back. The propane actually belongs to work. I have some others here at the house. My offset here is done/roached, I do have a propane 4 burner and my little Webber kettle. About the time I retire I'll build my bbq/smoker/grill area and get it all organized. Still haven't totally settled on the layout yet.

    Even through I quit drinking, I still like to use beer for marinades sometimes.

    And this is just something I like to do. I'm not really a big food snob. More like just good redneck/Tex-Mex/Mexican style smoked meats, veggies, beans. The business, well it's a business. I enjoy doing it but it has to sustain itself. Overhead's fairly low, good customers and gives me some guns and ammo money. If it ever goes under it'll just add more gear to the backyard cooking area.

    Hey Martin,I found out if you dice your onions and store them in water it takes some of the strong smell out of them and makes them crunchy compared to just diced onion.
