I haven’t built up the nerve yet.Worried about making a piece of $130 boot leather. Let us know how it turns out.

 

Threw some rub on thick cut pork chops, now they're back in the fridge for a few hours before it's smoking time.



I'm also going to throw some fresh pineapple on the smoker with them.

 

It’ll be awhile before I can get to it, but will report with findings. I’m not expecting it to be much different than other briskets considering the nature of that cut.

 

What ya doing to it?

 

Just a regular smoke. A control study to see if I think it’s really worth the extra money versus any other brisket.

Oddly enough, the other Select brisket I picked up had more marbling and could bend in half.

 

Kinda like one had Peloton & the other went to a real gym then.

 

What's special about that brisket?

 

Chops are on.



Unfortunately the pineapple had turned so it got binned.

 

Raspberry chipotle sauce on the side, just in case it doesn't go with the rub.

 

Smoked some deer backstrap Saturday for supper with a reverse sear.







Then a Boston butt yesterday.



Looks like we'll be eating meat everyday this week for lunch and supper

 

Had wife, mother in law, and two other ladies from the family spend the weekend. Was able to squeeze in a grill session between their kale smoothies, piña coladas, and salads...woke up early Sunday and made breakfast and lunch for them on the Kamado.

 

The bostun butt smoked on Sunday made a good sammich today with my wife's homemade bbq sauce!

 

Can you share the bbq sauce recipe?

Doing some Asian style ribs. They smell really good.

 

They look like they smell really good, too!

 

Ketchup, brown sugar, and something else she said (sorry, I can't remember). She doesn't have a recipe, she's always made it by taste

 

That’s it. I’m building a workstation for my smokers. Couple o’ butts going on for an overnight smoke.

 

Mornin’, 7 hours in. Time to put a thermometer in these and see where we’re at.
