    Threw some rub on thick cut pork chops, now they're back in the fridge for a few hours before it's smoking time.

    It’ll be awhile before I can get to it, but will report with findings. I’m not expecting it to be much different than other briskets considering the nature of that cut.

    Just a regular smoke. A control study to see if I think it’s really worth the extra money versus any other brisket.

    Oddly enough, the other Select brisket I picked up had more marbling and could bend in half.

Was able to squeeze in a grill session between their kale smoothies, piña coladas, and salads...woke up early Sunday and made breakfast and lunch for them on the Kamado.
