I guess I should elaborate.


Here's the deal about butchering a steer...

It's a helluva lot bigger than a deer, for one.
You need a block and tackle to raise up the carcass.
Everything is more difficult and more time consuming.
And God help you if you somehow pierce one of the stomachs and have a jet of fermented grass hit you in the face.
Even without that, it stinks.
The smell permeates your clothes and hair.

To this day, I dislike the smell of raw meat.

I'm not alone in this. My Dad especially disliked it and insisted on everything being well done.
Barbecues at the Grange Hall (the Grange movement was a thing among farmers, once upon a time)...
Church banquets... etc.
Nothing was rare.
I never knew while growing up, that people anywhere insisted on eating meat rare.

Maybe I'm overstating the case
I can only speak to my experience growing up on a farm.

Today, I always ask that my steaks be done medium.
Usually, what I get is medium rare or even bloody.
Now, I'm not particularly squeamish, so I don't complain.

An inferior steak will always be less tough if you tenderize the Hell out of it and cook it rare.
And that's mostly what you'll find available these days.
No comparison to the beef we had on the farm.

Excess bull calves were either sold for veal or we would castrate one, maybe two for beef once they got big enough.
Those steers were genuine grass fed, no hormones, no antibiotics (this was back in the days of using Sulfa powder).
In addition to grass, they got hay, silage and corn.
All grown right there.

Luckily, everyone can suit themselves
