    Here is the other thing I threw on the smoker yesterday - armadillo eggs.

    Sweet peppers, cored stuffed with a mixture of cream cheese and shredded Tillamook cheddar. Pepper was then wrapped with Frank Corriher sausage from good ol’ Landis, NC. The whole shebang was then wrapped in bacon, my first attempt at a bacon weave. The guests ate them before I could try them but I hear they were good.

    I picked up one of the packaged corned beef briskets because it was a steal of a deal and I haven't seen fresh brisket on sale in forever around here. I can't imagine it will cook any different than a regular brisket flat, just without the trimming, but does anyone else have experience with these?

    Obviously it's going to taste different and being smoked or grilled is going to concentrate the seasoning which is salt heavy. You can choose to soak in cold water for an hour or so and change out the water every 20 minutes to help pull some of the salt out.

    You can also choose to make a rub for it with coriander and black pepper and turn it into a pastrami.. you can google rub recipes.

    Remember it gets sliced across the grain and cook it more by temp and feel than time. Good luck and post pictures!

    I did the math and if my figures and calculations are correct… 228 pieces of bacon for 19 eggs!!! Goodlord! Weave me a basket of bacon!

    Hahaha, close, but the horizontal pieces on the weave are 1/2 so 4 slices vertical and 2 total horizontal. Of the 19 peppers only 6 were used for armadillo eggs with sausage and bacon weave. The other 13 were simply stuffed then 1 piece of bacon used to wrap so 49 pieces of bacon. Still quite a bit….

    Yea I wanted to count them as halves but who halves bacon! Isn’t that a punishable offense?

    Lady wants Thai for dinner so I’m only smoking is some cream cheese today. Slathered in some On Point and a little extra smoked paprika.

    First of all.. I cooked up some bacon and then chopped that up .. added a couple cups of cheese, the bacon, some ranch dip mix, a bunch of chopped chives and the cream cheese and mixed it all together then reshaped into blocks and coated with Everything Bagel Seasoning - then scored in a diamond pattern for the effect while it smoked! HAHA
