    225 until it’s 165… wrap in butcher paper to maintain the bark/crust until 205, pull and rest for 1-2 hrs. Slice against the grain then serve.

    Timing gets me, ive had one get done in 8hrs one took 18:annoyed:some of that depends is if you let it come to room temp before putting on the smoker. 1-2 hours on counter is well within safe. As your cooking temp goes way over the minimum food temp parameters..
