I need to try one of those, done the same with the Cure 81 hams and really liked them. Nothing better than the day after thanksgiving sitting in the boat with lines in the water munching on a left over turkey sandwich on homemade bread. Usually had the ham on a biscuit before heading to the lake. (one of the nice things about living in the south)

Don't guess I've ever seen boneless short rib. That looks fantastic.

How long do you smoke them and how do you know when they’re done?

Smoked wings are done at 165F but if you take them closer to 190F the joints just fall apart. Smoked wings won't give you that crispy skin a lot of people enjoy so you crank the heat up at the end to crisp it or toss them on the grill or in the air fryer to get that skin however you like it

Thanks, I may try some soon. I’m not big on the crispy wings so smoking may be the best for me :D

I'm totally opposite! I like the skin crispy and the inside juicy!

Thermo temp probe is must have item. I have a thermo pop. Especially when trying not to over cook pork chops.

Like he said internal temp 165 is done but I got em at 176 and still plenty juicy and it took just shy of two hours to complete. Well worth it. For the smoker temp I keep it between 220-245.

Update on my Weber EX4 smokefire that had the motor quit. I reached out to Weber just to see what they would do, and told them I needed a new motor. They asked for my address and sent me the new Motor and auger along with a bag of pellets and a new ramp for the pellet feeder. No charge. I was surprised that they helped even though I dont think the smoker is under warranty.

Smoked some Cream Cheese on the Pitt Boss a couple days back.
225' for about 2 hours. Never mind the meat probe in the tin foil.
I was checking the grill temp in various places against the grill's RTD.

I believe weber has a 3 year warranty on the electrical components and 5 year on all other parts on the smoke fire

Their customer service is some of the best in the biz. I bought my Genesis from lowes as an open box return, never registered the warranty or anything since I assumed the original buyer did that. Igniter went out, out of stock online so I couldn’t buy one…emailed Weber. Told me it was on back order but two weeks later sent me one for free. And sent me like the whole ignition system lol

Another update, when I got home today I had another package. They sent a new temperature probe too. :) I would have been happy with just a new motor, but they exceeded that with all the extras.

I bought a Traeger from Costco in February of 2021. When I went to put it together, there was some damage to both the barrel and the lid.

Fast forward, contacted their official support chat on their website twice (which was complete crap) and twice on a Facebook chat (which was fantastic), I ended up with a new barrel, a new lid and they sent an entire new smoker because I was complaining that I shouldn't have to disassemble and reassemble a brand new smoker because of the damage.

I kept the damaged smoker and the new parts in my basement for the better part of a year because they said they wanted the broken parts back but they never sent em return labels so I sold it to a co-worker for cheap a few months ago.

Making some assumptions on what Traeger's actual cost to make a smoker would be, plus the replacement parts and all the shipping to me, they essentially broke even for what I paid for it. Shipping things back to them would have made them lose money.
