    1.5-2in thick in oven 225 for 35 minutes get cast iron smokey hot with canola/olive oil not butter! Slap the steak on 30-45 sec per side plus the edges! Let rest with butter on top for 10-15 minutes! Enjoy!

    I ended up getting the oil changed and the compressor wired. I didn't mess with the wiring in the box or the plumbing.

    The rest of my day was spent picking up free furniture for @mynameisrahlswife. :ballchain:

    The setup. Soapstone over coals as deflector and then sear surface.

    250F indirect for about an hour. 4.5 pounder. Yanked it at 122F flipping once. Set on breadboard and tented. Opened dampers for inferno mode. About 15 minutes to 550F surface temp on the stone. Seared it off both sides aboot a minute each. 20 minutes rest. Pulled at 130F. Rested to 135. The goods.
