    Do you run a high heat to get some convection for crispy skin? Ive recently received a Kamado Joe as a gift and have not done thighs yet.

    no, indirect, it floats tween 370-405, i gotta play with it, which makes all the difference in my world. when they get to round 145 150 internal, i will flip em to direct, and shuffle them as needed, cuz, no 2 thighs be alike..:hattip:

    Thanks again. If you haven’t done shishito peppers, they’re super great for a quick appetizer. They’re also incredibly versatile!

    1. Wash, dry, and place in bowl
    2. Oil of choice and pinch of kosher salt - the goal is to get the oil in the crevices (toasted sesame for me tonight)
    3. Dump into a medium heat cast iron, stirring every minute for roughly ten minutes
    4. Remove and place back into the bowl, sauce them with whatever!

    I’d like to see you put some of those Asian inspired marinades or sauces on them

    I do recall using shishitos instead of piri piri peppers because I couldn't find them around here for this

    Piri Piri inspired chicken thigh, Mexican Street Corn and American twice baked potato with green onion, bacon and cheese.

    I thoroughly enjoy authentic Peri Peri sauce, but I’ve seen conflicting information about it (spelling, peppers used, ingredients, etc.). I’ve found that Chile de árbol is a happy medium for all of the recipes. All these damn home chefs trying to recreate authenticity…

    The wife and I loved the shishito pepper tapas we had in Spain but haven’t been able to find these peppers back in here the States. Are you finding them at the grocery store or is there a local farm near you, or perhaps is there a specific season that we keep missing?
