    Reverse sear is, roast the steak in the oven (or smoker) at 250° for 30 minutes per pound. Then, while the steak is resting on a plate after roasting it, crank the grill to 400°. Sear the steak for 90 seconds on each side and then serve. It's called reverse sear because you sear the steak quick after most of the cooking is done. If you put it on the grill raw, it sears at the beginning of the cooking time.
