'00' Flour is the way to go... case closed..

2.5 cups King Arthur 00 Pizza flour
2 teaspoons kosher salt
2 teaspoons yeast
1.25 ~ 1.50 cups of water

I tend to go with 1.25 cups of water sometimes a hair less
sometimes the full 1.50 rarely more.

Dough hook it adding a bit of water at a time.
Form it ( ball it )
Set into bowl cover with plastic set it out for 2 hours.
Burp it.

Set it in fridge for at least 1 day but I find 2 days is best.

Take out and let set for 30 minutes cut into thirds.
Put new balls in tupperware with lid for 20-30 minutes before throwing...
Makes 3 pies.

I might have to try this. Wife just got us a membership…. We have yet to go to the store in person yet somehow spent $3,300 in the past 7 days on a new couch and garage freezer. (Online)

Not sure I approve getting a membership has saved us any money…. But I’ll be damned if I don’t get some pizza out of it!

I cry on the inside

 

Look up the Executive membership. I think if you spend something like a grand in a year, you get 2-3% back, or something like that. We keep saying we’re gonna do it but keep forgetting.

 

We have that one and we get a check back from Costco and from Visa.

The Costco check covers the membership fee for the year. For the Visa check, they're essentially paying us $100/month to use the card.

Yes, we spend entirely too much.

 

Speaking of Costco…


Costco CFO Richard Galanti revealed last Thursday that its famous hot dog-and-soda combo deal of $1.50 will remain in place despite record-high inflation.

 

I hope Costco brings back their combo pizza. Not sure why they got rid of it to begin with

Best pizza I’ve had since moving back to Alabama from the East Coast area almost 20 years ago. Can A Brotha Get A Slice In Montgomery, AL. Good stuff.

 

Getting a hankering for a Round Table Pepperoni triple play pizza this weekend.

Or I will slum it and toss a frozen Tombstone Pepperoni in the oven that has been sitting in the back of the freezer since Spring of 2020.

 

My wife's family is in Salisbury. I'll have to check it out next time I'm there.
