Trying the Famous Dave's chicken seasoning again, this time with some Season Salt added.

Not quite as hammy as last time and with more spices. The season salt/Famous Dave's is a decent combination.

Accompanied by mashed sweet potatoes and more stuffing.

I just bought a thermapen and joined.

I have a thermopop too that I bought on a group buy here.

Figured I’d share for those who aren’t in on the in.

    20$ reasonable.

I still prefer one of these (no-battery-required) bad boys

Jokes aside a pork loin on the smoker for slicing instead of pulling is great. I do it alongside turkey breasteses and sausages all the time.

    Mornin' y'all.

Cheese is sleeping in the fridge for a couple weeks :D

Question for the pellet guys. I remember there was a discussion about which pellets to/not to use, and I think it was because some had oils?

    Questions:
    1. What is it that I/"one" wants to avoid, is it oils?
    2. Which brand/make of pellets does not have this in there?

My friend asked about doing their own cheese smokes, and I mentioned use pellets not chips, but can't remember which pellets

Traeger pellets contain flavored oils so I personally avoid those. They're also more expensive so another reason to avoid them.

I prefer the Pit Boss pellets which are about 1/2 the cost and twice the quality.

So... should I buy more meater probes? I've got one and I like it mostly (wish it had longer range, though), but it's pricey enough not to be a 'no brainer'. Any alternatives?

Personally I consider 2 probes to be bare minimum. One for grill temp the other for meat. I get by with one for a meat probe as I just use the one probe in the shortest duration thing I have on the grill, then when the one is done, move the probe to the next...

Oh yeah the pellet has a temp sensor built in (and probes, tbh, but wireless > wired) and the meater has an ambient part and a meat part.
