I used to buy frozen stuffed peppers. When fully cooked the peppers was mush.

I didn't think green peppers could be frozen.

I think it depends on the vegetable. I always blanch tomato's before freezing. You probably want to peel them first. Other stuff like okra or green peppers, no. I freeze them like I do bananas. Line a cookie sheet with wax paper then spread them out and freeze them before putting them in the freezer bag.

    Quick Google search:
Blanching is a heat-and-cool process. It stops or slows natural enzymes in the tomatoes that could cause loss of flavor and color. Blanch tomatoes before freezing if they'll be in your freezer for more than a couple months. Blanching your tomatoes also makes easy work of peeling them.

My mother used to eat banana frozen. It was like banana ice cream.

I thought by cooking before freezing it will make the produce soft. By reading it seems like it's a must.

It just depends on the produce. Frozen peppers will never be good in a garden salad but great in chili, soup, etc.

I use the frozen banana in smoothies.

Depends on the produce. Frozen broccoli and cauliflower can be great steamed after freezing. I buy it frozen all the time. Just don't overcook.

I buy frozen a lot to. It's convenience. Sometimes buying frozen is better than buying fresh. The stores here can have bad produce at times.

In soup with the long cooking time I prefer fresh.

Is the ground going to support the weight? I'm going to have a shed built in the backyard. I'm worried about the weight of the shed.
