    Very tasty and the stew beef - lean to start - was gloriously tender.

    My wife - THE chef - says:

    "Biscuits not tall enough" - well OK she did concede they are flaky and tasty. It's not like they are hockey pucks. I rolled them out about 1/2" thick, they rose to be about 1.25" thick. What the hell, yeah she makes these 2" high biscuits. Women and size. Who knew?

    "Gravy too thick" - I didn't know that was a thing. I used millet flour for thickener. Worked GREAT. I probably should have thinned it back a tad, but really she likes more soupy stuff. Coated just fine.

    My gripe? I like Guinness but the stew barely had much beer flavor, could have used a just a tad more hops believe it or not. Maybe next time, one can of IPA as well.

    Fun and I mean super easy.

    There are times (like now) when I need bread quickly and don't have time for sourdough or other long duration recipes. I go with my quick-and-dirty-Ciabatta. Takes 2.5 hours from start to finish but you do need to fold the dough three times at 30min intervals. I usually set a timer on my phone and get other things done in between. Traditionally, Ciabatta requires a Biga starter which is an overnight ordeal and contrary to "quick and dirty" so this isn't a "real" Ciabatta but it's fast and tasty and fluffy and tasty. These two babies just came out of the oven.

    I'll post recipe below if anyone is interested.

    400ml warm water
    2 tsp yeast
    Mix them.
    Add 500g bread flour, 2 tsp salt, 2 tbsp olive oil and mix. Dough is wet and sticky.
    1st rest 30 min then fold
    2nd rest 30 min then fold
    3rd rest 30 min then fold
    4th rest 30 min then shape on floured surface
    Bake at 450F for 20 minutes (for 2 loaves)

    You can shape into one huge loaf or 2 smaller loafs or 6 or 8 buns. 20 min bake time for 2 loafs...other configurations require different times. I usually bake till internal temp is 205ºF.
