    You could try using two baking sheets. It adds a layer of insulation that helps keep the bottoms from burning.

    and my version i add about 1 cup cooked/cooled italian sausage and top it with about 1/2 cup barilla tomato basil sauce and about 1/4 mozz. i also use GF bread crumbs instead of flour to combat the excess moisture issue
    heat & moisture are killers for this. keep everything well chilled and when you're getting ready to form the balls if they just won't hold together add a few more bread crumbs and throw everything in the fridge for 15 minutes, then try again. dont handle them too long because even your body heat is enough to make them mushy

    i could never live with someone who is lactose intolerant. would not work for me ever! :laugh:

    currently waiting for the dish to cool a bit so i can hopefully get them on the plate in one piece. not the most attractive meal but damn is it tasty. just going simple tonight with some fettuccini and then leftovers tomorrow with a nice steak :hungry:

    It’s interesting there’s no eggs in the ricotta to act a binder.

    But I agree with you entirely. Huge relief when we found out the wife wasn’t lactose intolerant, just celiac :(

    i thought about trying that. i do that with my lasagna recipe. this is usually fine keeping everything cooled down and adding in the bread crumbs

    Thanks! I had been doing a nonfat Greek yogurt method for awhile and was never super happy with the results. This is full yeast, boiled, and baked. I’ll make a much bigger batch next time for how much work is involved.

    I was watching a YouTube video where a guy recommended this flour for Italian bread and pizza dough. We have it coming from Amazon and are going to give it a try.

    Yeah, my grandson is spoiled. I feel badly for him. He was diagnosed at the age of 4 with Celiac. He really doesn't remember a life of gluten. He's very picky and loves pizza. The crust on the video looked so much like a gluten crust, I just had to give it a try. I did the subscribe and save, so it will be here soon. I hope it makes a delicious pizza and bread for him. It actually contains a gluten free wheat starch:

    Yoooooo! I highly recommend using the Red Lobster biscuit mix for sausage cheese balls. Don’t forget to baste with the garlic herb butter packet ;)
